Cottage Cheese Alfredo Pasta

Ingredients

  • 350g of your favourite pasta noodle

  • 3-4 garlic chicken sausages, cut into 1/2 inches — we get ours from Sunworks Farm (at the DT farmers market)

  • 500g cottage cheese, blended until smooth

  • 1 head of broccoli, cut into small pieces

  • 3-4 cloves of garlic, minced

  • 2 tbsp Parmesan cheese

  • 1 tbsp olive oil

  • 1 tbsp butter

  • Salt & pepper to taste

Instructions

  • In a large pot, cook your noodles to al dente. Oil lightly and set aside

    • Note: keep 1/2 cup of your pasta water to use later on

  • In a large saucepan on medium-low heat, add in your butter. Let melt

  • Add in your diced garlic and cut up sausages. Continue to stir and flip your sausages until they are browned on each side

  • Now add in your broccoli. Then, add 3-4 tbsps of water into your saucepan and cover immediately. Let cook for 3-4 minutes, stirring every ~30 seconds.

  • Now, add your blended up cottage cheese right into the saucepan. Stir to combine the sausages, broccoli and garlic with the cottage cheese sauce

  • Add in your Parmesan cheese, salt and pepper (I use a lot of pepper). Stir to combine

  • If your sauce is too thick, add some of your pasta water into the mixture, 1 tbsp at a time

  • Finally, add your pasta noodles into the sauce. Stir to combine and let simmer for 2 minutes

  • You’re done! Plate and enjoy, and top with more pepper and Parmesan if you’d like :)
