Cheese Crusted Beef Burrito with Queso

Ingredients

  • 1 large white tortilla

  • 1 lb ground beef (only use ~1/4 for the burrito

  • 1 pouch of taco seasoning

  • 1/2 cup of sharp cheddar cheese, grated

  • 1/4 cup canned corn

  • 1/2 cup black beans

  • 1/4 cup jasmine rice, cooked

  • 1 tbsp. tomato paste

  • 1 tsp. cumin

  • 1 tsp. garlic powder

  • 2 tbsp. sour cream

  • 2 tbsp. salsa (spice level to your taste)

  • 1/2 tomato, diced

  • Optional: 1/4 cup shredded lettuce

Instructions

  • Cook your rice with your preferred rice cooking method. Once done, move it to a mixing bowl and add in your tomato paste, cumin and garlic powder. Mix and set aside

  • In a large pan on medium heat, cook your ground beef through. Then, add your taco seasoning and cook according to the instructions. Once done, set aside

  • Heat your tortilla in the microwave for 30 seconds. Once done, start assembling your burrito. Add your rice, beef, canned corn, black beans, tomato, lettuce (optional), salsa & sour cream. If you’re feeling extra cheesy, add 1-2 tbsps of shredded cheese into the wrap as well!

  • Next, put a medium-sized pan on low heat. Add in half of your shredded cheese into a 2in x 5in rectangle (about the size of your burrito, hah) . Let it melt for ~45 seconds

  • Once melted, put your burrito in the pan, right on top of the cheese. Let it sit for 2-3 minutes, or until the underside of the burrito is crisp and golden

  • Add the remainder of the cheese into the pan and let it melt. Once the first side of the burrito is crisp, roll the burrito onto the other side of cheese. Let sit for 2-3 minutes, or until the underside is also crisp

  • Remove, plate, cut and enjoy!
