Jalapeño Popper Quesadilla

Ingredients

  • 2 large tortillas (I used whole wheat)

  • 1 large jalapeño, deseeded and diced

  • 2-3 tbsp of plain cream cheese

  • 1/3 cup of grated sharp cheddar cheese

  • 1/4 cup shaved parmesan cheese

  • 1 tbsp olive oil

Instructions

  • Take both of your tortillas and spread a thin layer of cream cheese on one side of each (1-2 tbsps on each)

  • Next, put a large pan on medium heat and add your olive oil. Use a brush to ensure the entire bottom is evenly coated

  • Add one of your tortillas on top of the oil, cream cheese side facing up. Then evenly add all of your toppings (cheddar cheese, parmesan cheese, diced jalapeños)

  • Add your second tortilla to the top, cream cheese side down

  • After about 2-3 minutes since you put the first tortilla down, the bottom should be gold and crispy. Use a spatula to check. Once ready, gently flip your quesadilla to the other side. Let cook for an additional 2-3 minutes until the cheese is fully melted and the second tortilla is golden

  • Once done, move your quesadilla to a cutting board and let sit for 1-2 minutes. Then, use a sharp knife to cut into 6 smaller slices

  • Eat alone or with your dip of choice—I used plain yogurt with sriracha for mine!
