Healthy Egg Salad
Ingredients
8 large eggs
3/4 cup plain greek yogurt
2 tbsp mayonaise
1 tbsp yellow mustard
1 tsp Paprika
3 stalks of green onion, chopped finely
Salt & Pepper to taste
Instructions
In a large pot, add your water and place it on your burner. Put the heat on high
Once boiling, carefully add in your 8 large eggs. Set a timer for 10 minutes
While it cooks, grab a large mixing bowl and add in your ingredients: plain greek yogurt, mayonnaise, yellow mustard, paprika, green onion, salt & pepper. Set aside
Once your eggs are done, carefully move them to a bowl with water & ice. Let them sit for 5 minutes, then crack them to remove the shell
Move your de-shelled eggs to a cutting board and chop them into bite sized pieces, about 1 inch in diameter
Add your chopped eggs to your mixing bowl filled with your sauce mixture. Mix until combined and add more spices if necessary
Serve on its own or in my favourite way: between two pieces of toasted whole wheat bread with lettuce and pickles
