Healthy Egg Salad

Ingredients

  • 8 large eggs

  • 3/4 cup plain greek yogurt

  • 2 tbsp mayonaise

  • 1 tbsp yellow mustard

  • 1 tsp Paprika

  • 3 stalks of green onion, chopped finely

  • Salt & Pepper to taste

Instructions

  • In a large pot, add your water and place it on your burner. Put the heat on high

  • Once boiling, carefully add in your 8 large eggs. Set a timer for 10 minutes

  • While it cooks, grab a large mixing bowl and add in your ingredients: plain greek yogurt, mayonnaise, yellow mustard, paprika, green onion, salt & pepper. Set aside

  • Once your eggs are done, carefully move them to a bowl with water & ice. Let them sit for 5 minutes, then crack them to remove the shell

  • Move your de-shelled eggs to a cutting board and chop them into bite sized pieces, about 1 inch in diameter

  • Add your chopped eggs to your mixing bowl filled with your sauce mixture. Mix until combined and add more spices if necessary

  • Serve on its own or in my favourite way: between two pieces of toasted whole wheat bread with lettuce and pickles
