Easy Homemade Jalapeño Mac & Cheese

Ingredients

  • 500g Macaroni noodles

  • 2 cups milk (your choice)

  • 1 cup chicken broth

  • 1/2 cup half & half cream

  • 3 tbsp. unsalted butter

  • 3 tbsp. all purpose flour

  • 1 jalapeño, chopped finely

  • 1 cup Gouda cheese

  • 1 cup Sharp Cheddar Cheese

  • 1/2 cup freshly grated Parmesan

  • 2 tbsp. Panko bread crumbs

  • 1/2 tbsp. garlic powder

  • Salt & pepper to taste

Instructions

  • In a large pot, bring water to boil and cook your noodles until al dente. Add a bit of olive oil to your noodles to prevent sticking and set aside

  • In a large pan on medium heat, melt your unsalted butter. Once melted and turning slightly golden (~2 minutes) whisk in your flour one tablespoon at a time. Once all added and stirred, you should have a paste

  • Next, whisk in your milk 1/2 cup at a time. Make sure everything is mixed, without clumps, before adding in the next 1/2 cup

  • Once all your milk is whisked in, add in your diced jalapeños, chicken broth and half & half cream. Whisk together and bring to a low heat

  • Once at a boil, slowly add in your Gouda, Cheddar and Parmesan cheese, 1/2 cup at a time. Whisk until smooth

  • Add in your garlic salt, pepper and salt

  • Put your noodles directly into the pan with your cheese sauce. Leave on low heat and stir until combined. Let the noodles cook in the sauce for another 3 minutes

  • While your noodles are cooking in the sauce, put your breadcrumbs on a sheet pan and put them in the preheated 350 degree oven. Keep a close eye on them, but they should get to a golden brown within 3 minutes

  • Take your breadcrumbs out of the oven and your macaroni & cheese off heat

  • Move your macaroni & cheese to a serving bowl and sprinkle with your golden breadcrumbs

  • Enjoy!
