Creamy Tomato Bisque
Inspired by my friend Nadhar. Thank you for the inspiration—it is a heavenly soup!
Ingredients
(Serves 4-6)
5 large tomatoes, cut into wedges
2 medium white onions, cut into wedges
5 garlic cloves, cut in half
2 tbsp olive oil
2 bullion cubes
2 cups water
1 cup heavy cream
1 tsp thyme
1 tsp oregano
Salt & pepper to taste
Top with fresh parsley
Instructions
Preheat your oven to 350 degrees
Cut up your tomato, onion and garlic, place on a baking sheet
Drizzle with oil and season with thyme, oregano, salt & pepper
Place in oven and cook for 30 minutes
Remove from oven, place in medium-sized pot over medium heat, and blend until smooth with immersion blender
Add water and bullion cubes, give it another blend for ultimate smoothness, bring to a boil and let it cook down for 5-10 minutes
Stir in cream, move to your favourite bowl, and top with fresh parsley
Serve alongside grilled cheese… I like putting pickles in mine (try it—it’s phenomenal)
