Creamy Tomato Bisque

Inspired by my friend Nadhar. Thank you for the inspiration—it is a heavenly soup!

Ingredients

(Serves 4-6)

  • 5 large tomatoes, cut into wedges

  • 2 medium white onions, cut into wedges

  • 5 garlic cloves, cut in half

  • 2 tbsp olive oil

  • 2 bullion cubes

  • 2 cups water

  • 1 cup heavy cream

  • 1 tsp thyme

  • 1 tsp oregano

  • Salt & pepper to taste

  • Top with fresh parsley

Instructions

  • Preheat your oven to 350 degrees

  • Cut up your tomato, onion and garlic, place on a baking sheet

  • Drizzle with oil and season with thyme, oregano, salt & pepper

  • Place in oven and cook for 30 minutes

  • Remove from oven, place in medium-sized pot over medium heat, and blend until smooth with immersion blender

  • Add water and bullion cubes, give it another blend for ultimate smoothness, bring to a boil and let it cook down for 5-10 minutes

  • Stir in cream, move to your favourite bowl, and top with fresh parsley

  • Serve alongside grilled cheese… I like putting pickles in mine (try it—it’s phenomenal)
