Avocado Pesto Gnocchi

Ingredients

(Serves 3-4)

  • 500 g gnocchi (we use President’s Choice pre-packaged)

  • 1 whole medium-sized avocado

  • 2 tbsp. extra virgin olive oil

  • 3/4 cup cup almond milk

  • 1 cup arugula

  • 3/4 cup fresh basil

  • 1 medium tomato, diced

  • 2 garlic clothes, diced

  • Salt and ground pepper to taste

  • Optional: 1 tbsp sriracha salt

Instructions

  • Start by boiling your water. Once at a simmer, add the entire package of gnocchi and cook according to the instructions. Once done, drain, set aside and drizzle with ~tbsp. olive oil to keep from sticking together.

    • Important: keep 1/2 cup of pasta water

  • Next, put your avocado, 1 tbsp olive oil, almond milk, arugula and basil into a blender or food processor, and blend until everything is smooth.

  • On the side, dice up your medium tomato

  • In a large saucepan on medium-low heat, add your pasta sauce and tomatoes to the pan to warm it.

  • Once the sauce is warm (about 3 minutes), add in your gnocchi. Slowly add in some pasta water while stirring, until the sauce becomes your desired consistency.

  • Move to your favourite bowl and enjoy!
