Avocado & Corn Summer Salad
A little off brand for us, but this salad is incredible. Its crispy corn, creamy avocado and sweet dressing is PERFECT for summer and you absolutely need to try it.
Ingredients
Single serving
Salad
2 cups spring mix salad
1 medium-sized corn on the cob
1/3 large cucumber, cut into quarters
1/2 medium-sized avocado, diced
1 radish, cut finely
Optional: 1/4 red onion, cut into fine strips
Dressing
2 tbsp. plain greek yogurt
1/2 - 1 tbsp. olive oil
1/2 tsp. honey
1/2 tsp. dried dill
1/2 tsp. white wine vinegar
1 tbsp. water
Salt & pepper to taste
Instructions
Start by boiling your water. Once boiling, add your corn on the cob and cook for 5 minutes. Remove and set aside and let cool for 5 minutes
Once cooled, cut the corn off the cob (carefully) and place around 3/4 of it into a mixing bowl
We don’t need to use the entire cob of corn in the salad, but you can if you want!
In the mixing bowl, add the rest of your ingredients after cutting. This will include the spring mix, cucumber, avocado and radish. Mix together
In a separate small dish, combine all of your salad dressing ingredients. This includes your plain greek yogurt, olive oil, honey, dried dill, white wine vinegar, salt, pepper and water. Stir until combined
Now, mix your salad and dressing together until evenly combined!
Move to your favourite bowl and enjoy :)
