Delicious Chickpea Salad
Ingredients
2 cans of chickpeas—washed, drained and mashed
2-3 stalks of green onion, chopped finely
1/2 medium red onion, diced finely
2 stalks of celery, diced finely
1 red bell pepper, diced finely
1/2 large jalapeno, seeded and diced finely (or add a full japaleno if you’re feelin’ spicy)
2 small pickles, diced finely
4 tbsp pickle juice
1/2 tbsp yellow mustard
2 tbsp mayonaise
2 tbsp plain greek yogurt
Salt, pepper and garlic powder to taste
Instructions
Put all above ingredients into a mixing bowl and stir until combined
That’s it! Put it between bread (rye pictured), eat as an open-faced sandwich or eat it alone—it’s good any (and every) way!
