Delicious Chickpea Salad

Ingredients

  • 2 cans of chickpeas—washed, drained and mashed

  • 2-3 stalks of green onion, chopped finely

  • 1/2 medium red onion, diced finely

  • 2 stalks of celery, diced finely

  • 1 red bell pepper, diced finely

  • 1/2 large jalapeno, seeded and diced finely (or add a full japaleno if you’re feelin’ spicy)

  • 2 small pickles, diced finely

  • 4 tbsp pickle juice

  • 1/2 tbsp yellow mustard

  • 2 tbsp mayonaise

  • 2 tbsp plain greek yogurt

  • Salt, pepper and garlic powder to taste

Instructions

  • Put all above ingredients into a mixing bowl and stir until combined

  • That’s it! Put it between bread (rye pictured), eat as an open-faced sandwich or eat it alone—it’s good any (and every) way!
